Discover its story.
Jean-Marc came to work with his father in 1985.
Motivated by the love of their job, they succeeded in creating a fine reputation among the most demanding connoisseurs. In 1991, Jean-Marc and his sister Béatrice took over from Jean with the ambition to follow the same uncompromising standards. 2019 is seeing Antonin, Jean-Marc’s son, joins him to perpetuate the family tradition as well as resuming to grow their vineyard.
« The only spring that never runs dry is inspiration, which is a gift of nature ».
Jean-Marc’s number one priority is to respect the terroir he has inherited. The soil is ploughed all year long and organic fertilizers are adapted to the needs of each vine. Jean-Marc lavishes great care to his vines.
March pruning, removing side shoots, training, leaf thinning, green harvesting and manual picking account for quality grapes that are essential for making great wine.
As soon as they are cut, the bunches of Chardonnay are put whole into a pneumatic press. The
juice is going into oak barrels (30% new) for 12 months and spends 6 months in stainless steel
vats before bottling.
The grapes of Pinot Noir are sorted and destemmed before being put into an
open vat to undergo cold pre-fermentation maceration. After 10 days of alcoholic fermentation,
wines are aging in barrel for 12 months before spending another 6 months into stainless steel vats.
