The Story

Mainly from the vineyards of my father, Jean-Marc Morey (son of Albert Morey) retired since 2016, and from fermages, the Domaine Caroline Morey operates 7 hectares of vineyards on the villages of Chassagne-Montrachet, Santenay and Beaune; About 60% Chardonnay in Guyot pruning and 40% in Pinot Noir (equally between Guyot and Royat). The first vintage of the estate is 2014.

The work of the vines

We work the vines in a traditional way in the respect of the plant. Between reasoned cultivation and soil work, we try to perpetuate the plantations for future generations (the age of the vines ranges from 10 to 70 years).

Winemaking and ageing know-how.

The white wines are vinified without intervention to preserve the terroir. Fermentations are made in 350 litres barrels (25% new wood). The breeding on Lees lasts between 15 and 20 months according to the vintages.
The red wines are vinified in vats (between 15 and 25 days) with a minimum of intervention (punching down and pumping over). The percentage of whole clusters also depends on the terroir and the vintage.
Our wines are unfiltered, clogged with natural cork and waxed to allow a good evolution in the bottle.
