Au Pied du Mont Chauve is located in Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin, in the heart of the most beautiful climates and terroirs of winegrowing Burgundy. In a will of synergy between the soil and the wine obtained, Francine Picard cultivates the vines in biodynamic way. Delicate and expressive, Au Pied du Mont Chauve’s vintages are truly precise jewels where the perfectly controlled ageing reveals a fresh density of unmistakable elegance on the palate.
The grapes are grown biodynamically. We stimulate the microbial activity of the soil with a very energizing preparations (500: horn manure). During the vegetative cycle, we also spray decoctions of horsetail, nettle, and silica that have an energizing and disease prevention power for the vines. Natural grassing between the vines, and mechanical work of the soil. The vines are trained in single Guyot, keeping one long cane and one spur per vine, one budding every two eyes, in order to obtain well ventilated and beautiful grapes.
Chardonnay are hand-picked in crates, sorted and conveyed directly to the pneumatic press. Whole grapes are pressed. The juice is run off into stainless steel vats and settles for one night. Then the must is directly poured into barrels to carry out its alcoholic fermentation. 18 months ageing on lees, including 10 months in oak barrels. Pinot Noir harvested by hand in crates, sorted and 100% destemmed. Traditional Burgundy vinification, in open thermoregulated vats. Aged 15 months in Burgundy oak barrels (30 % of new oak)
